Toowoomba Pasta

From Toowoomba to the World & Back to Us!
Here’s How It’s Done:

Ingredients:

  • 600g fresh Fritz fettucine
  • 10 button mushrooms, sliced
  • 3 spring onions, finely sliced (whites and greens kept separate, optional)
  • 50g (3.5 tbsp) butter
  • 3 tbsp olive oil
  • 12 prawn cutlets, peeled and deveined
  • ½ tbsp Gochujang (Korean chili paste)
  • 1 tbsp ketchup (for a touch of US flavor)
  • 50ml (3 tbsp) Soju (or substitute with dry white wine)
  • 550g Fritz Formaggio sauce (Garlic & Cheese cream sauce)
  • Salt or Soy sauce to taste
  • Parmesan cheese, for finishing

Instructions:

  1. Prepare the Fettucine:
  • Boil a large pot of salted water. Add the fresh Fritz fettucine and cook according to package instructions (about 3 minutes).
  • Drain and set aside, reserving a little pasta water.
  1. Sauté Mushrooms & Spring Onion Whites:
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the sliced mushrooms and cook for 5-7 minutes until browned and tender. Season with a pinch of salt.
  • Add the spring onion whites and sauté for another minute until softened. Set this mushroom mixture aside.
  1. Cook the Prawns:
  • In the same skillet, heat the remaining 2 tablespoons of olive oil and 25g of butter.
  • Add the prawn cutlets and season with salt and Gochujang. Cook for 2-3 minutes on each side, until the prawns turn pink and opaque.
  • Stir in the ketchup and pour in the Soju (or wine). Let it simmer for 1-2 minutes, allowing the alcohol to evaporate and the sauce to reduce slightly.
  1. Add the Formaggio Sauce:
  • Pour the Fritz Formaggio sauce into the pan with the prawns. Let it warm up, stirring gently to combine with the prawn juices.
  1. Combine with Pasta:
  • Add the cooked fettucine to the skillet and toss to coat with the sauce. If the sauce is too thick, add a little of the reserved pasta water to loosen it.
  1. Serve:
  • Divide the fettucine among 4 plates.
  • Sprinkle with the spring onion greens and finish with freshly grated Parmesan cheese.

Alternately here a creamy dressing : For the Creamy Dressing: ½ cup mayonnaise ¼ cup Greek yogurt 1 tbsp Dijon mustard 1 tbsp honey 1 tbsp lemon juice Salt and pepper to taste Perfect for your Christmas picnic or as a side dish to your festive mains.
